Harvest takes place at an early stage of ripening.

Oil is obtained through a two phase continuous system of extraction, without heating.

The whole of the process from harvesting to complete elaboration is carried out within 24 hours.

Thus the oil retains its outstanding qualities of smell and taste.
This yields an exquisitely balanced Extra Virgin Olive Oil of a superb blend and full flavoured ,made out of carefully treated very fine green fruity olives, in addition to other properties as fragrance , its sharp, pungent, touch of sweet almond , red and green apples, and its freshness among others.
Chemically, this oil shows very low acidity (< 0.5) and high contents of anti-oxidants which makes its distinctive quality.

Petrus is offered in two varieties: traditional, and intense
